We enjoy this menu before a full day of striding through the snow! It is the perfect
start to a crisp morning. The muffins are outstanding served warm with our blueberry
spread. Serve them to family and friends....I doubt you will have any leftovers!
                                  SKI PARTY BREAKFAST MENU                                       
                       

     Rising Star Oatmeal Muffins        
Creamy blueberry spread
Fresh eggs your way with all the trimmings
Seasonal fruit salad
Fruit Sparkler
coffee and tea
                 Rising Star Oatmeal Muffins
              makes 12 medium sized muffins

Soak together for one hour:
1 cup of rolled oats
1 cup of buttermilk

Once your oats mixture has soaked the correct amount of
time, mix together thoroughly the following in your home
mixer or by hand:
1/4 cup of nonfat plain yogurt (I use Brown cow brand)
1 tbsp of canola oil
1/2 cup brown sugar
2 egg whites

In a separate bowl sift together;
1/2 cup whole wheat flour (I use king Arthur)
1/2 cup unbleached all purpose flour (again king Arthur)
1/2 tsp of baking soda
1 teaspoon salt
1 teaspoon of cinnamon

add this alternately with your rolled oats mixture to your
yogurt sugar mix. Mix until blended.

Add your muffin mix equally to 12 lined muffin cups, and
bake at 400 degrees for 20 to 25 minutes. Test with a
tester stick in center of a muffin to make sure they are
cooked through. Oven temperatures vary, so watch to
make sure you do not overcook. Serve with creamy
blueberry spread.

Calories per muffin:116 ; Protein 3.8 grams; Carbohydrates
21.1 grams; fat 2 grams.



            Creamy Blueberry Spread

Take a block of Neufchatel cheese (light cream cheese) and
blend with any Blueberry ALL FRUIT spread. Feel free to
experiment with strawberry, peach or other flavor of you
do not like blueberry. I used Whole Foods brand of
blueberry spread and Neufchatel cheese.  Whip these
together until creamy and smooth. Refrigerate overnight
for best flavor!

1 ounce of Neufchatel cheese is 70 calories, 2 grams of
protein, 1 gram of carbs, and 6 grams of fat.

Wild blueberry fruit spread (whole foods brand) 1
tablespoon equals: 30 calories, 0 fat, 7 grams of carb, and
0 protein.

If you would like to further reduce the fat content of this
spread, feel free to use Non fat cream cheese instead.


                  FRESH EGGS YOUR WAY WITH
                         ALL THE TRIMMINGS

A dozen eggs or more depending on how many people you
are serving

Various freshly chopped veggies, such as bell pepper strips,
sliced onions, mushrooms, tomatoes, diced avocado,
grated low fat cheeses, spinach or kale or chard, various
herbs and spices, Salsas.

Cook up your eggs/egg whites according to each person's
tastes (ie: scrambled, poached etc) On a table or counter
top have bowls of your veggies, that each guest can go
through to select what they want added to their eggs. A
simple and festive way to serve each guest or family
member.


            FRESH SEASONAL FRUIT SALAD

This one is simple. Just select several fresh fruits that are in
season and dice, stir together, sprinkle with some fresh
squeezed lemon and/ or lime juice and serve. Our salad
pictured here is Honeydew melon, mandarin
orange,
banana and blueberry.

                         FRUIT SPARKLER

My kids love this one! It is so easy and healthy. It is
fantastic on a hot summer day as well as before skiing.

Sparkling water - we used a citrus flavored water- again
whole foods brand. (DO NOT USE WATER THAT IS
SWEETENED WITH ARTIFICIAL SWEETENERS!!)

to this add fresh thinly sliced lemons, blood oranges, navel
oranges, and limes. Try grapefruit too!

Let this sit a little while to marinate. Serve each person in a
glass with a few slices of the citrus.
