Valentine's Day Chocolate Pancakes
Chocolate lovers rejoice! Here for your eating pleasure is a healthy low calorie and
low fat chocolate pancake recipe. When Valentine's day rolls around, I always make
these for my family. Now you can enjoy them as well! Serve with veggie breakfast
sausages (such as Boca or Tofurkey) sparkling fruit juice, or for the adults a blood
orange mimosa!  

Makes one serving so please double for your convenience.

1/3 cup of uncooked oatmeal
1/4 cup of nonfat cottage cheese
3 egg whites
1/8 cup of vanilla fat free yogurt
1 to 2 tbsp of dutch process cocoa powder (I like mine real chocolaty!)
1/4 lite chocolate soy milk
Mini semisweet chocolate chips
Strawberries
Powdered sugar (or a little powdered sugar mixed with cocoa powder)

Take all ingredients (except chocolate chips) and place in a blender jar. Blend
thoroughly. Let batter sit for a few minutes while you heat your non stick pan or
griddle. Spray pan or griddle with cooking spray. Pour pancakes into pan or onto
griddle and then sprinkle with a few mini chocolate chips. Cook until edges start
to dry, and the pancakes begin to look bubbly, then flip to cook on other side
until cooked all the way through.
Serve with strawberries cut lengthwise so that they look like little hearts. Dust
with a light coating of powdered sugar.

Calories with 1 tbsp of choc. chips added and sprinkling of powdered sugar as well
as 1 cup strawberries=340.75 calories per serving with 5.375 grams of fat.
