When I was a kid growing up, my mom’s friend used to make these classic treats for special occasions…I distinctly
remember them at Christmas time. She called them “Lemon Lovelies” and lovely they are! I think just about
everyone out there has enjoyed these at one time or another, as it is an “oldie but goodie” recipe!  I enjoy making
them at Christmas, spring and for summer celebrations. Their sunny flavor just bursts in your mouth! And the fact
that they are lighter in calories and fat than the original version puts your mind at ease. Yes. You can have an
occasional treat, and it doesn’t have to cost you!
LEMON LOVELIES
Crust:
¼ cup granulate sugar
3 tbsp. butter or stick margarine, softened
1 cup all purpose flour

Topping:
3 large eggs
¾ cup granulated sugar
2 tsp. grated lemon rind
1/3 cup fresh lemon juice
3 tbsp. all purpose flour
½ tsp. baking powder
1/8 tsp. salt
2 tsp. powdered sugar

Preheat oven to 350 degrees.
To prepare crust, beat ¼ cup sugar and butter at medium speed of a mixer until light and fluffy. Lightly spoon 1
cup of flour into a dry measuring cup, and level with a knife. Gradually add 1 cup flour to sugar mixture, beating at
low speed until mixture resembles fine crumbs. Gently press mixture into bottom of an 8 inch square baking pan.
Bake at 350 degrees for 15 minutes; cool on a wire rack.
To prepare topping, beat eggs at medium speed until foamy. Add ¾ cup sugar and next 5 ingredients; beat until
well blended. Pour egg mixture over partially baked crust. Bake at 350 for 25 minutes or until set. Cool on a wire
rack. Once completely cooled, before serving, dust with the powdered sugar.
